zsh: set text colour to white

zsh-syntax-highlighting may not highlight the text currently in the
prompt, sometimes making text look as if zsh-syntax-highlighting wasn't
there at all. before this the colour was black which made it unreadable.

zsh: set alias for ssh to use the TERM=xterm-256color env variable
...
fixes bug where remote sessions don't have an updated TERMINFO binary
that contains the definition for my current terminal, resulting in having
a broken prompt
